Katie Shelton Presents No-Bake Dark Chocolate Amaretto Balls
Not only are these Dark Chocolate Amaretto Balls vegan (with homemade wafers) they are bursting with flavors that will impress even the pickiest of palettes this holiday season. Made by the illustrious Katie Shelton @skunkboy_ on Instagram.
1 cup 70% dark chocolate (or darker if you prefer)
3 tablespoons agave
2 cups vanilla wafers
1 cup oats
1 cup chopped almonds
½ cup powdered sugar
½ cup amaretto liqueur
Granulated sugar for rolling
Melt the chocolate over a double boiler or in the microwave at 50% power.
Add the agave and stir well to mix.
In the bowl of a food processor, combine the vanilla wafers, oats, and nuts. Process the mixture to form fairly fine crumbs.
In a large bowl, combine the crumb mixture with the powdered sugar.
Add the melted chocolate mixture and the amaretto.
Mix well with a wooden spoon.
Let stand about 20 minutes and then form the mixture into 1 inch balls.
Roll the balls in granulated sugar. Store in an airtight container.*To make this recipe vegan like I did, make your own vanilla wafers at home! They make this treat extra delicious!
