Well, that is not that easy. You know, all that space necessary and the tied capital to put aside the produce of 10 yields for aging… but I thought, we are able to store 100 liter each year! We purchased 100 liter barrels and stored 100 liters every year since 2001 – until 2015. We had vintages with higher and lower residual sugar levels, low acidity levels followed by pithy acidity. We collected a wide range of grape varieties of different vineyards. In the spring of 2018, we combined the wines and bottled the collection. You could call this “non vintage” or “multi vintage”.
